Prepare the sauce, in a wok add the peanut oil and bring to temperature, then add the onion and brown, add the peanut butter followed by the coconut milk and other ingredients. Do not boil but simmer for 3 minutes.

Remove from wok when thickened then set aside.

In the empty wok add half the peanuts and warm without burning, then add the coleslaw mix, once warm but not too soft slowly toss in the other ingredients toss carefully warming and not mashing.

Once hot serve in bowls with a large serve of the peanut sauce on top, garnish with some chopped coriander and remainder of peanuts
