Laos Chicken in a Clay Pot |

Chop chicken into bite-sized pieces. Dry
with kitchen paper.
Heat claypot on and add the peanut oil add ginger, garlic and
stir fry until fragrant.
Add chicken pieces and brown turning
regally with chopsticks.
Once brown add oyster sauce and soy
sauces and reduce heat. Cook for a further 5 minutes with the
lid in place.
Remove lid and add the bok choy and mushrooms cook a further 2 -
3 minutes and serve.
