Beat eggs with a little salt and pepper to taste, then in a hot oil covered wok make an omelet with half of the mixture. Once cooked set aside and make another omelet with the remaining mixture. When cold roll the omelet's into long
tight rolls then slice thinly and set aside. Once all meat is cooked remove from pan and add small quantities of rice, capsicum, bean shoots and onion with some of the meats. You may need to add a little more oil. Once all cooked toss in the omelets slices and serve hot with the cucumber as a garnish.
